Chicken Dumplings

Ingredients
1 (10.75 ounce) can condensed cream of chicken soup
1 1/2 C. water
1/2 C. chopped celery
1 onion, quartered
1/2 tsp. salt
1/4 tsp. poultry seasoning
1/4 teaspoon ground black pepper
2 skinless, boneless chicken breast halves and 2 thighs
1/2 (10 ounce) pkg. frozen green peas and carrots
1/2 C. baking mix
3/4 C. milk
 
Instructions
  1. In large, heavy pot, combine soup, water, chicken, celery, onion, salt, poultry seasoning, and pepper. Cover and cook over low heat about 2 hours.
  2. Remove chicken from pot, shred it, and return to pot. Add peas and carrots and cook only 5 minutes longer.
  3. Add dumplings. To make dumplings: Mix baking mix and milk until a soft dough forms. Drop by tablespoonfuls onto BOILING stew. Simmer covered for 10 minutes, then uncover and simmer an additional 10 minutes.
