Deep Dish Pizza

We made this over the weekend.  We topped it with mushrooms, green peppers, Italian sausage, and pepperoni.  Will now seems to be asking for deep dish pizza once a week...

Ingredients
1/2 lb. mozzarella cheese, grated
4 - 5 slices provolone cheese
1 (14.5 oz.) can of diced tomatoes
1 jar (15.5 oz ) favorite pizza or pasta sauce (we like Goodness from Fresh & Easy)
1 tsp. basil
1 tsp. oregano
2 cloves garlic, peeled and crushed
1/4 C. onion, chopped
Salt and pepper to taste
Grated Parmesan cheese
2 Tbs. olive oil, plus more for greasing pans
1 T. sugar
1 basic pizza dough (we like Fresh & Easy)

Optional additions to the filling:
Cooked crumbled sweet or hot Italian sausage
Thin sliced Pepperoni
Sliced mushrooms
Slices of cored green pepper
Sliced ripe black olives

Instructions
  1. If adding sausage to filling, saute in a pan with 1 T. olive oil.  Add the other toppings, like the mushrooms and green pepper, to marry the flavors.
  2. In a medium pot saute onions and garlic in 1 T. olive oil.  Add basil, oregano, sugar, tomotoes and pasta sauce.  Simmer for 20 minutes.  Salt and pepper to taste.
  3. Oil one large round deep dish pans or cake pan. Put a little olive oil on your fingers and press and push the dough to the edge and up the sides of the pan. The dough should be 1/8 inch throughout.  I hate this part, it takes awhile to get the dough to stick to the pan since it's cover with oil.  Be patient.
  4. Layer mozarella cheese and provolone.
  5. Add filling(s).
  6. Add sauce.
  7. Liberally sprinkle with mozarella cheese, grated Parmesan cheese and drizzle the olive oil on top.
  8. Bake the pizza in a pre-heated 400 degree F oven for 35 to 40 minutes or until the top is golden and gooey and the crust is a light golden brown.
