Italian Meatballs



 



This may be Will's all time favorite dish.

Ingredients
A slice of good-quality white bread
1/3 C. milk
3/4 lb. ground beef
1/4 lb. ground pork
1 T. onion, chopped very fine
1 T. parsley, chopped
1 egg
1 T. extra virgin olive oil
3 T. parmigiano-reggiano cheese
Whole nutmeg
Salt & pepper
Bread crumbs
Vegetable oil

Directions
  1. Put the milk and bread in a small saucepan, and turn on the heat to low.  When the bread has soaked up all the milk, mash it to a pulp with a fork.  Remove from heat and cool completely.
  2. In a bowl add meats, onion, parsley, egg, olive oil, cheese, a tiny grating of nutmeg - about an 1/8 tsp., bread and milk mush, salt and pepper.  Gently knead the mixture with your hands.  When evenly combined, shape into balls about 1" in diameter.  Roll balls into bread crumbs.
  3. Brown meatballs on all sides in vegetable oil.
  4. Add meatballs into your favorite tomato sauce.  The juices from the meatballs will seep into your sauce and make it that more fabulous!  Cook meatballs in sauce for 1 hour at a low simmer.
