Roasted Garlic & Mushroom Pizza

Ingredients
6-10 galic cloves
Pizza dough
4 T. olive oil
16 ounces assorted wild mushrooms (cimini, portabello, shiitake, oyster, morel), cleaned, chopped
8 ounces mozzarella, grated

Directions
  1. Preheat the oven to 350 degrees.
  2. Place 6-10 garlic cloves in a small oven-proof dish, sprinkle with olive oil and season with black pepper. Cover and bake, shaking the pan occasionally, until the garlic cloves are soft and golden, about 15-20 minutes. 2.
  3. Sauté mushrooms in olive oil over a high heat for 4-5 minutes. Season with pepper and reserve. 
  4. Cover your pizza dough with mozzarella. Spoon the cooked mushrooms evenly over the cheese. Arrange the roasted garlic and top with parmesan shavings and parsley. Drizzle lightly with olive oil and bake for 15 to 20 minutes, until the crust is golden brown.
