Shoestring Onion Rings



Ingredients
1 large onion
2 cups buttermilk (enough to cover onions)
3 cups flour
3/4 T salt
Lots of black pepper
1/2 teaspoon cayenne pepper
vegetable or canola oil

Directions
1.  Begin by slicing the onions very thin.  Very thin where you can see the knife through the slice of onion you’re cutting as your cutting.
2.  Place onions in a baking dish and cover with buttermilk for at least one hour. If you don’t have buttermilk, you can use 3 cups of milk and a tablespoon of white vinegar.
3.  Combine dry ingredients in a large bowl and set aside.
4  Heat oil to 375 degrees. It’s important your oil is actually very close to 375 for the onions to fry up nicely.
5.  When the oil is hot, grab a handful of onions, throw into the flour mixture, tap to shake off excess, and PLUNGE into hot oil. Fry for a few minutes and remove as soon as golden brown. Place on paper towels to remove some of the excess oil. Don't put to many or overcrowd, the temperature of the oil will go down and all flour will come off your onions!
