Ingredients
1 lb of beef cut into chunks
1 medium bell pepper, sliced into strips
1 onion, quartered
2 medium potatoes, quartered (optional fried)
1 C. beef stock
1 bay leaves
2 T. vinegar
1 can tomato sauce
1/4 C. soy sauce
Salt & pepper to taste
Directions
1. In a pan, add the beef, tomato sauce, soy sauce, bay leaves and beef stock. Bring to a boil and simmer until the beef is almost tender
2. Add the vinegar and let boil for a couple of minutes.
3. Add the bell pepper, potatoes and onions.
4. Let simmer until potatoes are cooked.
5. Serve hot over steamed white rice.
