Tinola

A Filipino favorite growing up.


Ingredients
1 lb. chicken, cut into parts or choice cuts of breast, thighs of wings
2 medium sayote or chayote , diced
1/2 C. chili leaves oe spinach
3 C. water
2 T. ginger, roughly chopped
1/2 garlic, minced
1 small onion, diced
2 T. oil
2 T. patis
Salt and pepper, to taste

Instruction
  1. In a medium pot, heat oil and saute garlic, onion and ginger.
  2. Add the chicken and saute for about 10 minutes.
  3. Add water and bring to a boil and then lower to a simmer.  Cook for about an 45 minutes or until chicken is tender.
  4. Pour in patis, salt and pepper to taste.
  5. Add in papaya or sayote, cook until tender.
  6. When ready to serve, put chili leaves.  Serve over steamed rice.
