Miniture Apple Pies

Ingredients
2 (9 inch) pie shells
6 C. diced apples
4 T. C. butter
1/4 C. white sugar
1/4 C. brown sugar
3 T. water
3 T. all-purpose flour
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 C. all-purpose flour
1 C. packed brown sugar
6 T. butter

Directions
1.   Preheat oven to 375 degrees F (190 degrees C).
2.  In a small saucepan, melt butter and flour to form a paste.  Add apples, water, sugars, cinnamon, and nutmeg.  Cook apples until soft and tender, about 15 minutes.
3.  Cut pie dough into 2" circles.  Mold the mini pie shells into tassie pans.  Spoon mixture into pastry shells.
4.  For crumb topping, in a small bowl mix together 1 cup flour and brown sugar. Cut in butter until mixture is crumbly. Sprinkle mixture over apple filling.
5.  Bake in preheated oven for 20-25 minutes or until top is golden brown. Cool on a wire rack.
