Apple Pie Cupcakes


These cupcakes are a spinoff of my vanilla cupcakes.

Ingredients
Vanilla Cupcakes
3 Granny Smith apples, peeled, diced and cored
1/8 tsp nutmeg
1/2 tsp cinnamon
2 T brown sugar
2 T butter

Directions
1.  Preheat oven to 350 F (175 C).
2.  In a saute pan melt butter.  Add apples, nutmeg, cinnamon, and brown sugar.
3.  Cook until apples are cooked about 10-15 minutes.  Let cool. 
4.  While apples are cooking make the vanilla cupcakes.
5.  Fold in apples into cupcake batter.  Reserve 1/2 cup of the apples mixture to top off frosted cupcakes.
6.  Fill cupcake liners just over 2/3 full.
7. Bake for 14 minutes and then test to see if they are done. They are done when a toothpick comes out without wet batter stuck to it. The cupcakes should appear white with specks of vanilla bean. They should not turn a golden brown. If they are not done, test again in two minutes. If they are still not done, test again in another two minutes.
8. When the cupcakes are done, remove them immediately from the tins and leave them on a cooling rack (or just on your counter if you don't own a cooling rack) to cool.
9  Frost with vanilla buttercream and top with remaining apples.
