Thai Beef


Lydia (my best friend) and I went to a Thai cooking class and this was one of the recipes.  We changed it up a bit and added broccoli.  This is one of Will's favorite dishes.  It's kind of like beef and broccoli with a spicy twist.

Ingredients
1.5 lb. beef tenderloin (trim silver skin, thinly sliced, if too expensive you can use stir fry beef)
1 lb. fresh button mushrooms (cut in half)
1 large onion (cut into quarters, then in half)
2 green onions (cut into 2" pieces)
2 red Thai chilies or 1/2 T. red chili flakes (more or less for you level of spicy)
4 cloves garlic (minced)
2 T. flour
1 tsp. pepper
1 T. sugar
2 T. soy sauce
1 tsp. mushroom soy sauce (optional)
7 T. Thai oyster sauce
2 T. canola or vegetable oil
3 cups broccoli (washed and trimmed)

Directions
1.  Measure all ingredients and set aside.
2.  Pre-heat skillet and add oil.  Add onions, galic and muishrooms.  Cook until the mushrooms begin to leach out their water.
3.  Toss meat wiht flour, dust off excess and add beef to skillet. 
4.  Once beef is about half way cooked add the chili, sugar, soy, mushroom soy and oyster sauce.
5.  In the meantime steam broccoli, until bright green and still crisp.
6.  Cook stir fy until the sauce begins to thicken and remove the skillet from heat. 
7.  Toss in broccoli, garnish with green onions and serve over steamed rice.
